aigre-doux<\/p><p>6 filaments de safran\u00a0<em>Safr\u00e0 del Montsec<\/em><\/p><p>400 g de riz (bomba de pr\u00e9f\u00e9rence)<\/p><p>1 seiche fra\u00eeche<\/p><p>50 g de lotte<\/p><p><strong>Pour le bouillon de poisson<\/strong><\/p><p>150 g d\u2019oignon<\/p><p>2 carottes<\/p><p>\u00bd poireau<\/p><p>1 sel<\/p><p>1 petite cuiller\u00e9e de paprika piquant<\/p><p>30 ml d\u2019huile d\u2019olive vierge extra<\/p><p>12 filaments de safran\u00a0<em>Safr\u00e0 del Montsec<\/em><\/p><p>T\u00eate et ar\u00eates d\u2019un merlu<\/p><p>T\u00eates et carapaces de gambas et crevettes<\/p><p>250 g de crabe<\/p><p>250 g de squilles<\/p><p>1 cuisse de poule<\/p><p>2,5 l d\u2019eau (ou jusqu\u2019\u00e0 couvrir la marmite)<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<div class=\"elementor-element elementor-element-f7622c8 class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>Pr\u00e9paration\u00a0:<\/strong><\/p><p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Bouillon de poisson\u00a0:<\/p><p>Dans une marmite haute, verser l\u2019huile d\u2019olive vierge extra et ajouter l\u2019oignon, les carottes, le poireau et les ails. Lorsqu\u2019ils sont dor\u00e9s, ajouter les t\u00eates et les carapaces des crevettes et des gambas, les crabes et les quilles. Bien les \u00e9craser pour faire sortir tout le jus. Faire revenir pendant encore 5 minutes. Incorporer une ar\u00eate enti\u00e8re de merlu et sa t\u00eate. Remuer pendant deux minutes et incorporer le paprika (en veillant \u00e0 ne pas br\u00fbler le paprika) puis la sauce <em>tomate frito<\/em>. M\u00e9langer le tout et ajouter l\u2019eau, la nyora, la cuisse de poule et le sel. Laisser cuire \u00e0 feu moyen sans couvrir pendant 20 minutes, sans arr\u00eater d\u2019\u00e9cumer. Filtrer le bouillon et ajouter les filaments de safran <em>Safr\u00e0 del Montsec<\/em>, remettre sur feu doux pendant 5 minutes. L\u2019op\u00e9ration n\u2019est pas indispensable, mais le safran acquerra sa plus haute expression s\u2019il est infus\u00e9 pendant 4 heures.<\/p><p>\u00a0<\/p><p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Paella au safran\u00a0:<\/p><p>Porter le bouillon \u00e0 \u00e9bullition. Pendant ce temps,faire dorer la seiche et ajouter les filaments de safran <em>Safr\u00e0 del Montsec<\/em>. Remuer et ajouter le paprika. Sans arr\u00eater de remuer, ajouter la tomate. Une fois celle-ci bien incorpor\u00e9e, ajouter le riz et faire revenir. Puis ajouter le bouillon de poisson port\u00e9 \u00e0 \u00e9bullition dans la po\u00eale, laisser sur feu vif pendant 8 minutes. Ajouter entre-temps la lotte coup\u00e9e en d\u00e9s. Apr\u00e8s ces 8 minutes, baisser le feu \u00e0 temp\u00e9rature moyenne et laisser cuire 8 minutes de plus. Si nous voulons obtenir le \u00ab\u00a0socarrat\u00a0\u00bb tant convoit\u00e9, ajouter un filet d\u2019huile d\u2019olive sur toute la surface et monter le feu au maximum pendant 2 minutes.
