les ingr\u00e9dients du court-bouillon dans une casserole sur feu vif. Lorsqu\u2019ils commencent \u00e0 bouillir, baisser le feu de moiti\u00e9 et laisser cuire pendant 20 minutes. Filtrer dans une passoire fine et mettre de c\u00f4t\u00e9.<\/p><p>D\u00e9poser les filaments de safran dans un demi-verre du bouillon que nous venons de pr\u00e9parer et laisser infuser.<\/p><p>Dans une po\u00eale, faire chauffer les deux verres d\u2019huile et y frire les pommes de terre \u00e9pluch\u00e9es, nettoy\u00e9es, coup\u00e9es en rondelles pas trop fines et assaisonn\u00e9es avec du sel. Les retirer avant qu\u2019elles ne commencent \u00e0 dorer et mettre de c\u00f4t\u00e9.<\/p><p>Assaisonner les filets de merlu avec du sel, les passer dans de la farine et les faire frire dans l\u2019huile des pommes de terre, mettre de c\u00f4t\u00e9.<\/p><p>Retirer l\u2019huile de la po\u00eale et n\u2019en laisser qu\u2019un peu de sorte \u00e0 couvrir le fond. Ajouter l\u2019oignon et l\u2019ail finement hach\u00e9s. Lorsque l\u2019oignon commence \u00e0 \u00eatre dor\u00e9, ajouter une demi-cuiller\u00e9e de farine, six cuiller\u00e9es de pur\u00e9e de tomate \u2013\u00a0en remuant\u00a0\u2013 et une petite cuiller\u00e9e de paprika. Sans arr\u00eater de remuer, ajouter 3 tasses du court-bouillon et laisser cuire pendant 3 minutes. Retirer du feu, incorporer l\u2019infusion de safran et passer au passe-pur\u00e9e.\u00a0<\/p><p>Couvrir le fond d\u2019une casserole en terre cuite ou un plat \u00e0 four avec la pur\u00e9e de tomate restante, poser dessus les pommes de terre et encore dessus le poisson. Incorporer la sauce et mettre au four pr\u00e9chauff\u00e9 \u00e0 temp\u00e9rature moyenne pendant 10 \u00e0 15 minutes.
