gousses d\u2019ail<\/p><p>1 piment rouge<\/p><p>600 g de pommes de terre ou 4 pommes de terre moyennes<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div safran\u00a0<em>Safr\u00e0 del Montsec<\/em><\/p><p>Huile d\u2019olive<\/p><p>Sel<\/p><p>Laurier<\/p><p>Romarin<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<div class=\"elementor-element elementor-element-f7622c8 elementor-widget elementor-widget-text-editor\" data-id=\"f7622c8\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Chauffer l\u2019huile dans une marmite ou une casserole haute, sans la faire bouillir ni la frire (entre 60 et 80 degr\u00e9s), ajouter les ails et le piment entiers, laisser 5 minutes \u00e0 cette temp\u00e9rature et ajouter le cabillaud (ration d\u2019environ 7 cm x 7 cm). Ajouter de l\u2019huile (si n\u00e9cessaire) pour couvrir de plus d\u2019un centim\u00e8tre. Le temps de cuisson d\u00e9pend de l\u2019\u00e9paisseur et de la taille de la pi\u00e8ce, environ 10 minutes (ou lorsque les chairs se d\u00e9tachent facilement). Retirer le cabillaud de l\u2019huile pour arr\u00eater la cuisson et mettre de c\u00f4t\u00e9.<\/p><p>Dans une autre marmite, faire bouillir de l\u2019eau avec du laurier, du sel et une pinc\u00e9e de romarin, \u00e9plucher et couper les pommes de terre en rondelles d\u2019un doigt d\u2019\u00e9paisseur (1,5 cm) et les mettre dans l\u2019eau. Cinq minutes avant que les pommes de terre ne soient cuites, ajouter le safran, couvrir et retirer du feu.<\/p><p>Monter la cr\u00e8me d\u2019ail : mettre les ails dans un plat creux, les \u00e9craser avec une fourchette, ajouter de l\u2019huile de cuisson du cabillaud et m\u00e9langer en fouettant \u00e0 la mani\u00e8re d\u2019une mayonnaise, ajouter un peu d\u2019eau de cuisson des pommes de terre et continuer d\u2019ajouter de l\u2019huile et de l\u2019eau \u00e0 mesure que la cr\u00e8me monte.<\/p><p>Pour dresser l\u2019assiette, \u00e9taler la cr\u00e8me d\u2019ail, poser par-dessus les pommes de terre \u00e9goutt\u00e9es et encore par-dessus le cabillaud.
