D\u2019oli d\u2019oliva<\/p><p>\u00a0<\/p><p><strong>Per a la decoraci\u00f3 :<\/strong><\/p><p>Llesques de pa (per fer els crostons)<\/p><p>Gambes<\/p><p>Formatge ratllat (opcional)<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<div class=\"elementor-element elementor-element-f7622c8 elementor-widget elementor-widget-text-editor\" data-id=\"f7622c8\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>Preparaci\u00f3:<\/strong><\/p><p>Per a la sopa de peix, crostons i salsa \u00ab<em>Rouille<\/em>\u00bb: Netejar, treure les v\u00edsceres i tallar el peix en trossos grans. Netejar les pastanagues, el porro, el fonoll i picar-los en petits trossos. Picar tamb\u00e9 la ceba i escalfar-ho tot a foc lent amb oli d\u2019oliva.<\/p><p>Afegir el peix (reservar algun dels trossos m\u00e9s presentables per a la decoraci\u00f3), i coure\u2019ls uns minuts.<\/p><p>Netejar, picar el tom\u00e0quet i afegir-lo a la cassola juntament amb l\u2019all, el manat d\u2019herbes, el safr\u00e0, la sal i el pebre. Cobrir amb aigua calenta, portar a ebullici\u00f3 i coure durant 45 minuts.<\/p><p>Posteriorment retirar les espines, triturar i deixar-la coure a foc lent con el peix que hav\u00edem reservat i les gambes.<\/p><p>Per a la salsa \u00abRouille\u00bb: En un morter picar l\u2019all, la caiena, la molla de pa pr\u00e8viament remullada en la sopa i la clara d\u2019ou. Afegir l\u2019oli d\u2019oliva a poc a poc per muntar com una maionesa.<\/p><p>En una paella daurar els crostons.
