Passeu-lo per un colador fi i reserveu-lo.<\/p><p>Poseu els brins de safr\u00e0 en mig got del brou que heu preparat i deixeu-los en infusi\u00f3.<\/p><p>En una paella escalfeu els dos gots d&#8217;oli i fregiu les patates pelades, netes, tallades a rodanxes no molt fines i assaonades amb sal. Retireu-les abans que es comencin a daurar i reserveu-les.<\/p><p>Saleu els filets de llu\u00e7, passeu-los per farina i fregiu-los en el mateix oli de les patates, reserveu-los.<\/p><p>Retireu l&#8217;oli de la paella, deixant nom\u00e9s una mica que cobreixi el fons, afegiu la ceba i l&#8217;all finament picats. Quan la ceba comenci a prendre un color daurat, afegiu mitja cullerada de farina, sis cullerades de pasta de tom\u00e0quet -removent- i una culleradeta de pebre vermell. Sense deixar de remenar, afegiu-hi 3 tasses del brou curt i deixeu-ho coure durant 3 minuts. Retireu del foc, incorporeu-hi la infusi\u00f3 de safr\u00e0 i passeu-ho pel passapur\u00e9.<\/p><p>Cobriu el fons d&#8217;una cassola de fang o font de forn, amb la pasta de tom\u00e0quet restant, poseu-hi a sobre les patates i al damunt el peix. Incorporeu-hi la salsa i poseu-ho al forn pr\u00e8viament escalfat a mitja temperatura durant 10 o 15 min.
